I often find the pretty cupcakes I find in the shops with big twirly icing have quite heavy stodgy cakes; they look pretty but once you've worked your way through the icing they are pretty rubbish as cakes go. The recipe I used for these cakes was my go-to recipe from Delia, this cake is so easy to make, tasty and versatile. I use this recipe to make the girls birthday cakes and find it easy to cut and decorate and also to scale up and down. Today I just added cocoa powder to make it a chocolate cake and made half the quantity which yeilded 24 fairy cakes. I've also added cherries and other fruit in the past.
